The aim of this course is to provide an understanding of the relationship between food hygiene, food poisoning and food spoilage, the socio-economic costs of poor food hygiene, and the role of HACCP and hazard analysis in ensuring food safety.

Objectives


Define the term: food hygiene.

Explain the moral, legal and financial benefits of high standards of food hygiene, including the role of HACCP and hazard analysis in maintaining high standards.

Describe employer’s and employees’ Responsibilities.

Explain the cost of poor food hygiene in economic terms to the Country, employer, and in terms of inconvenience to employees and general public.

State the trends in food poisoning over the most recent 10 year period in Scotland.

Describe the foods most commonly involved in outbreaks of food poisoning.

The course will cover the following subjects:


Supervisory management

HACCP and hazard analysis

Bacteriology

Bacterial food poisoning and food bourne infections

Non-Bacterial food poisoning

Food contamination and it’s prevention

Personal hygiene

Food storage and temperature control

Food preservation

The working environment

Cleaning and disinfection

Legislation

Examinations:

REHIS - An examination will take place at the end of the course, this consists of a twenty question short answer paper that is set out by REHIS. Candidates will be allowed two and a half hours to complete this. The pass mark is 60%, candidates achieving 80% or more at their first attempt at the examination will be awarded a credit pass. Should any candidates fail the examination, a resit must be taken within 12 months of sitting the original examination.

HABC - This qualification is assessed through a 45-question multiple-choice question examination. The duration of the examination is 90 MINUTES. Successful learners must achieve a score of at least 30 out of 45 to pass. Learners will receive a Distinction if they achieve 36 or more. Following the assessment, a list of results will be provided to the centre contacts stating whether learners have passed or failed. Certificates for those who are successful will be dispatched for distribution by the centre contacts.
